Almond marzipan is ideal for covering cakes, modelling shapes and figurines, cutting out decorations and all kinds of hand-sculpted details. Dutch Marzipan 1:3 – 0.5 kg colours beautifully with all types of edible food colouring, and you can lighten it further with edible white colour.
Whether you are creating a smooth, elegant cake cover or tiny marzipan flowers and characters, this firmer, paler marzipan helps you achieve crisp edges and clean finishes. With 25% almonds, it offers a balanced taste and a reliable working texture. If you need extra firmness for fine details, simply work in a little more fine icing sugar.
Marzipan can also be used in baking: grate it into cake batters for a gentle almond flavour, or make a marzipan crumble by mixing 70 g marzipan with 15 g butter and 50 g coarse flour. It also works wonderfully in fruit dumplings—replace the stone in an apricot or plum with a small marzipan ball. For praline fillings, grate the marzipan into a pan, add a little cream and melt gently.
Before covering or modelling, knead the marzipan thoroughly until smooth and pliable. For covering a cake, roll out a sheet about 0.3–0.5 cm thick, dusting with icing sugar as you roll. To lift it onto the cake, wrap the sheet around a long rolling pin or tube, then unroll over the cake. Use cake smoothers/irons to polish the surface, and consider using embossing tools or formers to create interesting textures. For shimmering and colourful surface effects, try dust colours (including pearl effects), edible pens, and liquid or gel colours. Join modelled pieces with edible glue or a homemade mix of egg white and icing sugar.
