A special mixture suitable for making round pastry sponge cakes or rolls, which are the basis for making tops, Indian, butter rolls, etc.
Sandra BUFFY Komplet is a special mass suitable for the production of round sponge cakes, so-called buffers, or rolls, which are the basis of tops, Indian rolls, butter rolls and other confectionery products. It contains dried eggs and only drinking water is required when using it.
Benefits of a professional buffalo mix:
- simplicity of the technological procedure for making the buffle compound
- significant time saving in their production
- longer stability of the mass after whipping
- significantly prolonged stability of the sprayed shapes before baking
- possibility of larger mixes and better productivity
Use: 500 g of water per 1000 g of mix. Combine the mixture and water, allow to swell for 5 minutes, and whip at maximum speed for 3-5 minutes depending on the type of whipping machine used.
Baking parameters: at 190 °C for 10 to 15 minutes (depending on the type of oven) with the steam vent open.
Recipe for kernel and cocoa biscuits
Recommended technological procedure for the production of kernel buffers:
Combine the Sandra BUFFY Kit and water, let sit for about 5 minutes and then whip at max speed for 2.5 - 3 minutes until stable. Combine Aranka Peanut and water and let sit for about 20 minutes. Then lightly stir them into the pre-whipped Sandra BUFFY Komplet and spray the baking paper with a wide, smooth tip.

Recommended technological procedure for the production of cocoa buffers:
CombineSandra BRILANT with water and oil, leave to rest for 5 minutes. Whisk together Sandra BUFFY, water and egg liquid content. Stir the cocoa mass and combine with the whipped mass, then spray small buffers.
Baking parameters: at 190°C for 10 minutes with the steam vent open (parameters are for a planter electric oven).
Other uses of the mixture - for sheets and rolls
The mixture is also suitable for making rolls. Its neutral taste and aroma predispose it to this use. This strongly enhances the sensory qualities of the fillings. Coconut, cocoa powder and various kernels can also be added to the slices themselves.
As with the buffers, preparation is very simple. The ingredients are whisked together for about 5 minutes and then the chosen flavouring ingredient is stirred into the mass and the mass is processed. The sweetness can be controlled by adding sugar. Less sweet sheets are suitable for very sweet creams and fillings and vice versa.
