Decorgel White - "white chocolate" - is an innovative mirror glaze from the American brand Dawn. Designed to cover flat surfaces - creating a soft gel coating. Can be used to protect fresh fruit from drying out (best protection for fruit is obtained by adding 10% water to the glaze and applying a thin layer of the mixture to the fruit with a brush).
We recommend mixing the product thoroughly before use. The product is stable and resistant to temperature changes (freezing and thawing).
Easy to use, glossy glaze for full coverage of fine baked goods and bakery products, for which no additional stabilizing agents are needed. It can be applied hot or cold - for greater stability on domed or vertical surfaces, apply warm at 40-45°C.
Ingredients: glucose syrup 73% (contains sulphites), 23% water, gelling agent: pectin (E440), sodium alginate (E401), carrageenan (E407), xanthan gum (E415), acidity regulator: citric acid (E330), colour: titanium dioxide (E171), trisodium citrate (E331), calcium phosphate (E341), preservative: potassium sorbate (E202), binder: potassium chloride (E508), natural flavour.
